Yam Dumplings
Ingredients:
Boiled and Mashed Yam 200g
Flour 100g
Maggi shrimp 2 tablets
Eggs 4
Nutmeg (grated) 1 teaspoon
Baking powder 2 teaspoons
Chopped onion 50g
Oil for deep-frying
Method
Mix all ingredients and stir well till soft
Heat oil to 165 degrees centigrade or gas mark 3
With the fingertips, drop a little mixture into oil and deep fry till golden
Drain well and serve as the carbohydrate part of a meal
Could be served with meat or fish stew.
