Fried Yam Pies
Ingredients:
Boiled Yam slices (1/2 inch thick) ½ kg or 500g
Tomato Gravy
Boiled Garden Eggs ¼ kg or 250g
Mackerel (canned or smoked) 1 tin or 250g
Chopped onion 100g
Flour 200g
Maggi Shrimp 2 tablets
Method
Mix the flour and Maggi Shrimp with water into a soft sticky dough
Heat a hot plate and spread a little of the dough on the hot plate to form a thin circular film (this is done by hand)
Peel skin and remove seeds of garden eggs and discard
Chop flesh of garden eggs and mix with mackerel, chopped onion and tomato gravy. Correct seasoning with Maggi shrimp
Cut each slice of boiled yam into a thinner slice and sandwich with mackerel and garden egg mixture and wrap each sandwich with a skin and seal off with some of the dough.
Fry pies on both sides till crisp in texture and golden in color in a fairly hot oil (165 degrees)
Serve as a snack or as a packed meal.
